Wow, Thanksgiving is fast approaching us already! That means turkey, mashed potatoes, cornbread dressing, and pumpkin pie. And we can’t forget about all those leftovers. But for those of us that are completely on the pumpkin-spice-everything bandwagon when it comes to Thanksgiving desserts, I’ve put together this yummy cake void of all things pumpkin. However, this cookie butter heaven still brings out those fall flavors that are sure to never disappoint. Hope you enjoy!

Pecan Praline Cookie Butter Cake | Rose + Pixel

Cake Batter

  • 17.5 oz Betty Crocker Sugar Cookie Mix
  • 14 oz jar cookie butter
  • 1 teaspoon cinnamon
  • 3 eggs
  • 14 oz condensed milk
  • 3/4 cup salted butter, melted

Pecan Praline Topping

  • 3/4 cup brown sugar
  • 2/3 cup evaporated milk
  • 2 cups crushed pecans
  • 1/2 cup salted butter
  • vanilla to taste

Cake Batter

  1. Preheat your oven to 350° F and spray a 9 x 13 pan with non-stick spray.
  2. Mix together cookie butter, cinnamon, eggs, and condensed milk, and spread mixture in baking dish.
  3. Sift sugar cookie mix evenly on top of cake batter
  4. Pour 3/4 cup melted salted butter on top of cake
  5. Put in oven and baked for 35 minutes

Pecan Praline Topping

  1. While cake is in oven, melt 1/2 cup butter on medium heat (do not go higher than medium heat wile preparing topping)
  2. Once butter has melted, add brown sugar, crushed pecans, and evaporated milk to pot. Add vanilla to taste. Once mixture has melted and begins to bubble, stir for 2 minutes and remove from heat. You should have a loose syrup consistency.
  3. Once cake has been removed from oven, top with pecan praline mixture immediately and wait to cool. Pecan topping will harden slightly. Enjoy!
